Frozen Smoked Kippers

Ramus Seafood, a nice local fishmonger is our usual destination to get smoked kippers. We have been enjoying their kippers. This time they didn't have any fresh smoked kippers but only once-frozen smoked kippers. Although they warned us that once-frozen versions were not as good as fresh, we bought two. J kindly cooked the fish. He made brown butter as a finishing sauce, which was his new recipe. His preparation was wonderful, but the fish was disappointing. Well, we should have expected it according to the fishmonger's warning. The texture of fish was kinda rubbery and the fish was somewhat salty. Lessons learned: Stay away from once-frozen smoked kippers!
