Banana Maple Syrup Muffins with Pecan & Pistachio

These were Banana Maple Syrup Muffin with Pecan & Pistachio.

I had just one dark banana I needed to rescue. As usual, I made banana muffins. Last time I added raspberries; this time I added maple syrup with a hint of cinnamon and vanilla. I also used my new coconut oil. So, no butter, no refined sugar, just one egg for 12 muffins would be good enough for J's breakfast.   
Toppings of pecan and pistachio, nicely roasted in the oven, were highlights. The combination of nuts and banana never goes wrong.
