Kofta b'siniyah with Roasted butternut squash & red onion


Both kofta b'siniyah and roasted butternut squash & red onion were based on our favorite cookbook, Jerusalem. The original recipe for the kofta calls for both lamb and veal while I used only lamb. I wonder if the result could be still called "kofta b'siniyha"...

This time I used a pack of diced butternut squash from Waitrose, which was handy! I skipped drizzling tahini sauce over the squash dish because kofta was served with tahini sauce. Whatever change I make on the recipes from Jerusalem, the result is always very good. That must be one of many reasons why the book has been our favorite.
