Sweet and Sour Tofu and Vegetable
This was sweet and sour tofu and vegetable if I need to name it... The dish with a nice vinegar kick goes well with streamed rice.
SERVES 2 x 2 = 4
1 block extra hard tofu cubed
1 green pepper
1 carrot
2 celery sticks
a handful of dried Shiitake (soften in water)
300 ml water
2-3 tbs soy sauce
4 1/2 tbs rice vinegar
1 1/2 tbs tomato paste
2 tsp Japanese chicken soup powder
1 tsp sugar
1 tsp grated ginger
2tsp corn starch, dissolved in 1 tbs water
1. Mix from water to ginger in the list above, set aside.
2. Heat a non-stick pan and brown all 6 sides of each of cubed tofu, set aside.
3. Saute all vegetable in the same pan until vegetable begin to soften, stir in tofu and sauce mixture.
4. Simmer in a few min, stir in corn starch mixture, simmer in another min
