Mabo-Nasu - no meat version

Mabo-Nasu is an originally Sichuan spicy sauteed eggplant dish that has been modified by Japanese. Usually ground pork is in; my version has no meat.

1 eggplant medium size
1 tbs sesame oil

2 tsp ginger
1 garlic clove
a pinch of spicy dried pepper

200 cc water
1tbs soy sauce
1tbs miso
1tbs suger
1tbs sake
1tsp oyster sauce

2 bunches scallion
2 tsp corn starch for thickening.

1. Heat oil and cook eggplant until it becomes soft
2. Stir in all the rest except scallion and cook
3. Stir in scallion and corn starch (dissolved in 1tbs water first), cook for 1 min

Oh, sorry J, I forgot to add 1 tsp vinegar at last. The dish was delicious anyway, I suppose.
