Blueberry Lemon Muffins 2


These were blueberry lemon muffins again.

Like the last time, I used Greek yogurt. Unlike the last time, I added three table spoons of heavy cream instead of vegetable oil.
 
I added two eggs instead of one. The muffins became bouncy. Just one extra egg made a big difference in terms of texture and flavor. Now I confirmed I prefer just one egg for 12 muffins. Lessons learned.
