Moroccan Chicken Tagine with J's Green Olives


I can safely say that Moroccan Chicken Tagine is one of my favorite chicken dishes. I added extra carrots to the dish to make it veggie-friendly. For me, without green olives, the dish is never completed. Their pungent flavor brightens the dish magically. I thought that there was a jar of green olives in the refrigerator... well, actually there wasn't. Fortunately there were several cans of Spanish green olives, Perelló Gordal that J kept for his drink. I borrowed one for the tagine. Those olives are crisp, juicy, firm and freshy. Properly pitted. Plus, they provide a surprise heat because the olives are packed with small pieces hot guindilla green pepper. J's favorite olive now. The olives played their role in the tagine beautifully. Of course, J liked the result very much, I believe.
