Germany's 'Weißer Spargel' Season 2024


Weißer Spargel, or white asparagus has come back! I was so excited to find the Germany's spring delicacy at the farmers' market in Wiesbaden. 



Not all asparagues are the same. Thicker asparaguses cost more than thinner. Also Class 1 is higher quality and more expensive than Class 2. The staff there helped me to select which would be suitable to make both soup (pureed) and a side dish (simply boiled).   
 

The recipe for the soup was a French style that I adapted last year and liked very much. The result was delicate, slightly sweet and delightful again! J suggested we should make and enjoy the soup every week until the season ends. We can do it!

I served simply boiled white asparaguses with melted butter and lemon juice the next day as a side dish, which were so tasty, too. White asparagus is definitely one of many great discoveries in Germany!
