Blueberry Banana Muffins 2
Here Blueberry Banana Muffins were again, but I made some changes on my own recipe.
The results were cakey and moist, and should be easier and healthier. They were delicious.

MAKES 12
5 oz all-purpose flour
4 oz cake flour
2 tsp baking soda
3 bananas
3/4 cup low-fat yoghurt
1/4 cup Splenda
1 egg
2 tsp vanilla extra
2 tbs vegetable oil
1tbs Grand Marnier
1 bag frozen blueberry
1. Shift flour and baking soda together, set aside
3. In a large bowl, smash bananas with a folk, mix in yoghurt, egg, vanilla extra, whisk well. Add vegetable oil and Grand Marnier.
4. Gently stir flour mixture into banana mixture, gently stir in blueberry
5. Spoon into lightly oiled muffin pans, bake 350 F, 35 min
