Kolokithokeftedes (Greek Zucchini Fritters)

These were Kolokithokeftedes - Greek Zucchini fritters.

Mix a lot of shredded zucchini, chopped scallions, a little of minced garlic, egg, grated Gruyere cheese (a substitute for Greek Graviera cheese), dill, mint, black pepper, and fresh breadcrumbs made from homemade Pita together, and make small disks. I baked them instead of traditional deep-frying to make them light and healthier. With squeeze fresh lemon juice over them, they were so tasty.

This was a great way to enjoy summer vegetables. I am glad J liked them too!
