Tomato Pork & Potato Salad

This was Tomato Pork and Potato Salad.

I remembered there was smoked pork frozen a few months ago in the freezer. And there were some fresh tomatoes and canned diced tomato. I quickly simmered pork in tomatoes, small garlic clove, chopped oregano, and a little of red wine vinegar, and garnished with fresh parsley. Tomatoes changed richness of fatty pork into sweet refreshing strew.

As a side dish, I made simple potato salad - salt-water-boiled potato splashed white vinegar, and mixed with celery, red onion, dill pickle relish, celery seeds, mayo, parsley, ground black pepper, powdered yellow mustard. That's always J's favorite.
