Veggie Chili
This was Veggie Chili.
Beans are good for you! I would love to cook bean dishes more often. This chili had two kinds of beans: pinto and red kidney.
Veggie Chili
SERVES 4
1 tbs vegetable oil
1/2 red onion, finely chopped
1 red pepper, finely chopped
2 garlic cloves, finely chopped
1 tbs cumin powder
3 tbs chili powder
1 small red chili pepper removed seeds, finely chopped
2 tsp dried oregano
1 can pinto beans
1 can red kidney beans
1 can (28oz) crushed tomato
2 tsp packed light brown sugar
1 1/2 cup water
1 cup corn
some chopped cilantro, diced avocado, fresh lime for garnish
1. Heat oil in a pan, saute red onion, red pepper, garlic, and spices until vegetables become soft.
2. Add in beans, tomato, brown sugar, water, bring to boil, reduce heat, simmer for about 30 min
3. Add corn, simmer for 10 min
4. Serve with garnish
Note: No salt added because canned beans and tomato already contain some salt.
