Cha Han (fried rice) with Veggie

This was Cha Han, fried rice, with vegetable, including scallion that I forgot to add in Udon.

Cha Han is very quick, easy, all-in-one-bowl dish, using leftover ingredients in the refrigerator. When we have leftover steak or ham, we often say, how about Cha Han? Small amount of meat is good enough to make a big fried rice bowl with satisfaction. This time, we didn't have any meat, but broccoli, carrot, mushroom, and scallion. Then, an egg. Egg is important to Cha Han, in my opinion, embracing all different ingredients together gently. Just one egg for 2 servings is fine. 

Seasoning is simple: soy sauce, black pepper and white pepper. Quickly stir-frying with high heat makes rice fluffy, and adding scallion and seasoning just before done creates bright flavor.

This is a good example to prove "Simple is Best."
