Potato Latkes with Smoked Salmon

These were Potato Latkes with Smoked Salmon.

We had small leftover smoked salmon from our recent weekend breakfast. To make the salmon be a part of dinner, I made Potato Latkes. It was my creation by combining Cook's Illustrated's Potato Rösti recipe with ingredients in my refrigerator: Yukon Gold potatoes, shallot, and egg. I pan-fried Latkes with olive oil, not butter, each side for 3 minutes. Toppings were sour cream, chive, dill, capers and of course smoked salmon. Finishing with ground black pepper and lemon juice, our Potato Latkes were very satisfying.
