Black Bean Enchiladas

This was black bean enchiladas.

It was J's request. I made sweet potato and black bean enchiladas before that J liked very much. So I told J I would make it again. Then J said he would not like to have sweet potato. What? That was my favorite part! But I listened to J to make him happy. I adapted the recipe of sweet potato and black bean enchiladas with a couple of changes like most importantly skipping sweet potato and adding extra onion and green pepper to fill the vacancy of sweet potato.
Like the last time with sweet potato, chipotle chile in adobo sauce brought nice smokey chile flavor and heat. It was pretty spicy for me, but J liked the heat level. He enjoyed the dish and asked me to add chicken next time. Well, sorry J, I don't know if his new request comes true because I like the idea that my enchiladas are vegetarian meal and I am not a big fan of chicken.
