Italian-Style Pot Roast
This was Italian-Style Pot Roast.
It was a very exciting dinner for us! Because it was our first slow cooker dish and it was cooked by J!! Yes, from the beginning to the end, J handled ALL by himself. He adapted a recipe from our new book, Slow Cooker Revolution by American's Test Kitchen. After about 1 hour prep, J put all ingredients in the slow cooker and simmered the pot roast for 6 hours.
After 6 hours, the beef needed to rest for 20 minutes. During then, I made a quick polenta with cheese and butter, which took only less than 10 minutes. Easy!
J's pot roast was SUPERB! The beef was so tender. No fork required. The sauce was very flavorful. In fact we enjoyed this dish again the next day, soaking the sauce with bread instead of polenta. I can't wait for another slow cooker experiment. What will be the next, my dear J?
