Mexican-Style Pork & Hominy Stew
Our third slow cooker adventure was making this fragrant and spicy stew known as Pozole. We adapted a recipe from our trusted slow cooker recipe book again. The recipe introduced to us puffy and chewy giant corn kernels, Hominy. According to Huffington Post, Hominy is basically dried corn that has been soaked in a mineral lime bath and Hominy is REALLY old: there are sings of Hominy being produced in mesoamerica circa 1500 BC. Fascinating! I have seen cans of Hominy at the Mexican food section of my local grocery store before, but had no idea what it was. My question has been solved. We both liked Hominy. It will be a nice starchy alternative to beans, pasta or lentils.
Cooking time was 6 hours. This recipe used a foil packet to keep carrots from overcooking. Our carrots in the packet were tender but not mussy after 6 hours. Now it's time for the carrots to meet the pork stew.
It was very flavorful stew. Serving with rice was my choice to enjoy this spicy stew but just a bowl of stew was enjoyable too.
