Baingan Bhurtha
This was Baingan Bhurtha - a traditional Northern Indian (Punjab region) eggplant dish that is cooked with onion, tomato and spices.
When I made okra masala the day before, I thought we would be able to eat the curry at least two days, which meant I won't need to cook next day. I was wrong. We must have eaten a lot. The okra masala leftover was not enough for another sufficient dinner for two. To complement the leftover, I made the second curry - Baingan Bhurtha. I adapted a recipe that I found online. The recipe has received many good reviews and looked easy to make. Although the eggplant almost stopped my heart by bursting in the toaster oven while cooked under the broiler, the eggplant curry was easy to make and very tasty! J liked it too. I will definitely make the curry again and will poke eggplant's skin before cooking.
