Giant Omelet with Mushroom, Green Pepper & Mexcan Cheese

This was half of giant omelet with mushroom, green pepper, and Mexican cheese.

And roasted small butter potatoes with rosemary from our garden. And some fresh grape tomatoes. I rarely make omelet. I like omelet but it usually doesn't come on my menu. Then, why did I make this? I had mushroom and green pepper leftover that I wanted to finish. I asked J for any dinner idea to use them. He said omelet. Interesting and I liked his suggestion.

I realized I actually don't know how to make omelet at the moment when I was facing a pan that I just filled with eggs. Eggs were becoming cooked... Ok, I spread mushroom and green pepper that I cooked separately with a slice of bacon on the eggs. Added cheese. A lot of cheese for J. Then I tried to fold everything together to make a giant pillow - Oh-oh, corruption. I called J. He was the omelet saver of the day, managing to flip the omelet to hide the big damage part and halved the omelet and place each on two plates. It looked not too bad and tasted great. So I could say our breakfast-like dinner was successful.
