Summer Tomato Steak with Summer Beans & J's Garlic Toast
This was Summer Tomato Steak with Summer Beans and J's Garlic Toast.
It was a Vegetable day! I had a giant tomato and some wax beans and green beans from the Farmer's market. We were talking we would make Tuna sandwich with this tomato, but it hadn't happened yet. The tomato was so beautiful that I didn't want to chop and cook. A solution popped up in mind. Tomato steak! Just halved the tomato, and topped with olive oil, fresh oregano and basil, parmesan cheese and black pepper, and broiled in the toaster oven until the cheese started browning. I was a little bit concerned about how J would react to my tomato steak idea. Actually he said it sounded nice. Wonderful! I was so relieved because these was no plan B. For a side, I sautéed wax beans and green beans with shallot and garlic; meanwhile, J made his special garlic bread with the leftover homemade Hoagie buns. It became a lovely summer vegetable plate.
