Whole Wheat Banana Bread with Almond

This was whole wheat banana bread with almond.

My interest in whole wheat baking is ongoing.I adapted a recipe of Whole Wheat Banana Bread by King Arthur Flour with some changes. While the recipe called for 4 to 5 medium bananas, I used only two ripen bananas that were sitting on the kitchen counter. I added only 5 tablespoons of peanut oil instead of 1/2 cup of vegetable oil. I replaced 1 cup of sugar with 1/2 cup of coconut sugar. I swapped chopped walnut with almond slices and used them as topping.
The result was lovely light and moist banana bread. Slightly sweet. Perfect.
