Mini Apple Custard Cream Pie
This was mini apple custard cream pie.
It was what we actually had on National Pi Day. I had two unbaked mini pie crusts in the freezer, which I made with the leftover dough from Quiche Lorraine. I baked them, cooked custard cream, sautéed chopped apple with a handful of golden raisins, and made cookie crumbles separately. Then, I assembled all into a mini pie before serving. A new form of apple pie. J looked the pie like a stranger, but he ate it and seemed to like it. I called it a pie, but it was more like a tart. J said it could be a pie because it was round. What a great thinking! He saved our National Pie Day!
