Red Lentil Soup
Recently we bought a bag of red lentils at a local Indian grocery store. J requested something like a casserole dish with the lentils. I googled to find any potential recipes, but no luck. Lentil soup and lentil salad are common, but not casserole. After all I made soup. In fact it was a good opportunity for me to try a relatively new recipe of red lentil soup from Cook's Illustrated. The soup was nicely spiced in a Northern African way. Not spicy but warm and aromatic. A swirl of paprika-mint butter was a nice touch. J showed his technique to turn the swirl into a flower... for me it looked like a galaxy in the space of red lentil soup. Either way, the soup tasted lovely! J said this was the best lentil soup. Another success from Cook's Illustrated!
