Banana Muffins

These were banana muffins.

There was only one relatively small ripen banana on the kitchen counter. It wouldn't be enough for a loaf of banana bread, but feasible for just six muffins. Mixing several ingredients without a recipe is my way to make muffins these days: banana, low-fat yogurt, one egg, coconut sugar, vegetable oil, all purpose flour, baking powder, baking soda and flaxseed meal. I found leftover crumbles in freezer from when I made for mini apple custard cream pie and knew what to do. The muffins were crowned with golden buttery crumbles along with chopped pecan. They were nice. Light and very slightly sweet, good for breakfast or tea time or both. The texture was springy because of I guess flaxseed meal. I liked it!
