Black Bean-Stuffed Peppers, again
They are so good whenever I would like a vegetable dinner like this time. Black beans, onion, garlic, carrots, and celery made a satisfying and tasty filling. The top of melting cheddar and Monterey jack cheese mix was a special treat!
