Cauliflower & Penne Gratin
This was cauliflower and penne gratin.
The first meal I cooked after I came back from Japan was this creamy non-meat gratin. Actually I was going to make classic green bean casserole again. However, the local grocery store didn't have nice fresh green beans. Along with white mushrooms, I bought cauliflower to substitute for green beans. I wanted to make the gratin two day meals, but the cauliflower I picked looked a little small to do so. I added a yellow onion. Still, the volume didn't look enough for two days. I added some boiled penne pasta and parmesan cheese. Then, the gratin was big and rich enough for two, maybe three days!
It tasted very good, and we finished all in two days. It didn't last three days.
