Mushroom, Wild Rice & Barley Soup, Fall 2016

This was mushroom, wild rice and barley soup.

It's one of soups I make at least once during fall and winter although there has been a small difference from time to time. Last year's soup was mushroom and barley. The year before was mushroom, wild rice and barley, like this time. A version of 2013 was Mushroom, Barley and a tiny pasta "Acini di pepe." After all, the soup was hearty and delicious each time. So this was. In fact, this soup was more like soup-y risotto because of extra barley. It was heavenly filling and satisfying, ideal for a chilly fall evening!
