Potato Envelopes

These were Potato Envelopes as I named so.

Outside was obviously egg roll wraps. Inside was, guess what? Mashed potato mixed with sauteed minced shallots, petite green peas, shredded Mexican mix cheese, Herbes de Provence, and salt & pepper. Baked in the oven, outside became crispy and inside steamy.

This creation was somewhere between Japanese deep-fried potato balls, or Korokke, Indian samosa, and Eastern European potato knish. These unidentified appetizers were absolutely delish!
