Tofu Salad 2 & Veggie Egg Rolls

These were Tofu Salad and Veggie Egg Rolls.

This Tofu Salad with sesame-lemon dressing was similar to what I made a month ago although there were some differences: no cucumber, extra-firm tofu instead of firm tofu, and dill for chive. 

Thinking that only salad might make J hungry later, I made some veggie egg rolls too. Inside was leftover filling of Moo Shu Veggie that I froze. I like a quick easy side dish like this. I pan-fried the egg rolls with a little bit of oil as usual.

Actually the tofu salad made us very satisfied. We both ate just a veggie egg roll each, and the rest of them became the next day's lunch.
