Simple Tofu & Vegetable Soup

This was simple Tofu and vegetable soup.

I used a Japanese vegetable soup stock that my mother sent us as a part of our birthday gifts. It was made with five kinds of vegetables grown in Japan. The vegetables were in a very fine powder form, packed in a little bag. You can simmer the bag in water and make a vegetable soup stock. Also you can take the power out from the bag and mix in rice, meat, seafood, etc for a deep veggie flavor.
It was low-sodium and I didn't add any salt, so the soup was quite plain, but that was actually what we wanted - simple and delicate vegetable and tofu soup. Good for us!
