Pork Chop with Tarragon & Dijon Mustard Sauce

Tarragon and pork? I had never made that combination before, but it worked very well! J enjoyed it and so did I. Although tarragon is not on my regular shopping list, I am slowly increasing the number of recipes with tarragon.
