Courgette & Avocado Cake

I was curious about the taste of gluten free courgette and avocado cake when I saw it at a local espresso bar and decided to take a slice home to share with J. The cake was moist and tasted like..., well, a carrot cake. I didn't find zucchini or avocado in any bite. I made egg-free, butter-free, refined sugar-free, chocolate avocado muffins years ago, and they were fine. It may be fun to explore vegan sweets again while we keep enjoying rich baked goods made with wonderful local fresh dairy in Yorkshire.
