Apricot Financier, again

These were Apricot Financier, again!

Making Financier is a great way to consume egg white in the freezer. And they are always so tasty. Classic plain Financier is pleasant while my recent trend is adding sweet & sour dried apricot in.
Topped with pistachio, they became pretty springtime treats. I brought some for my friend's birthday party. Happy birthday, S!
