Pan-fried Chicken Sandwich

This was Pan-fried Chicken Sandwich.

There was just one piece of chicken breast in freezer that I wanted to do something with. I saw several one-chicken-breast-recipes for two online, and this was my pick: Confidential Tender Chicken. It was a Japanese recipe and I am not sure this translation was proper, but the name of the recipe was something like that. The recipe marinates chicken breast in grated onion and garlic, soy source, Mirin, Sake, honey and black pepper, coats the chicken with cornstarch, pan-fries first and cooks more the chicken with the marinate sauce to teri-yaki the chicken. Sounded easy and yes, it was! More than 4500 people have tried this recipe, which can tell the recipe is solid. I didn't cook chicken with the marinate sauce after pan-fried though. I didn't want to make the chicken too saucy because I was planning to make sandwich with it. Bread was homemade Focaccia.
I, who usually don't like chicken, enjoyed the chicken very much. The chicken was juicy and tender and had a nice flavor from the one hour quick marinating. I will definitely keep the recipe.
