Pan-Seared Rib-Eye

This was pan-seared rib-eye steak with lima beans.

It was raining outside and not a good day to grill outside. I found Alton Brown's Pan-Seared Rib-Eye recipe that has received 5 stars based on more than 500 reviews. Promising. The recipe was simple, quick, easy. On the other hand, negative comments are mainly about smoke. Tremendous smoke. Imagine how steaks react on a super hot cast iron that was heated in the 500 degree oven, followed by extra-heating on the stove with high heat. Imagine oil jumping everywhere. But if the process guarantees deep golden crust and juicy inside, I wanted to try it. With J's assist, J's giant fan, a splatter screen, removing smoke detector, and closing all doors upstairs, we managed it. Actually it wasn't too bad. The good news is the steak was GREAT!
