Homemade Fishwich
This was homemade Fishwich.
Fishwich from a local sandwich delivery store had been our emergency (or lazy) lunch/dinner until the local store somehow stopped making Fishwich anymore. So we made our own versions.
We bought a cod fillet. J gave me an idea of cornmeal crust. So I mixed 3 tablespoons of cornmeal, 2 tablespoons of homemade toasted bread crumb, 1 tablespoon of all-purpose flower, three dashes of paprika, a few pinches of sea salt, and generous amount of grounded black pepper. I dipped the fish in milk and egg mixture and coated the fish with the cornmeal mixture.
Then I pan-fried the fish. Not deep-fried.
Fish was a thick cut. While I tried to cook it thoroughly, I made it blacken a bit. But the crust was nice crispy, not too bitter burned.
One problem though. The sandwich was unexpectedly oily. I assumed the bread, a little old leftover Focaccia caused it. And perhaps I didn't drain the cooked fish with a paper towel enough. However, it was pretty much edible with fresh tomato and greens along with homemade tartar sauce. Our future second Fishwich would be made with different bread. Yes, there will be the second. Hopefully soon!
