Linguine with Eggplant, Smoked Garlic & Tomato Sauce


We invited a new ingredient home: smoked garlic. My question was what to do with it. J said I could make a simple marinara pasta sauce with smoked garlic. I borrowed his idea and added eggplant to the homemade pasta sauce. Eggplant goes with a smoked flavor very well. It's a meaty veggie to make a dish substantial without real meat. Plus, eggplant is one of my favorite veggies.


The result was pretty good. Smokey flavor from the smoked garlic was very subtle that I couldn't really point. There was something certainly.
