Kedgeree revisited


Recently I heard that our favorite fishmonger on Kings Road has moved into Fodder, a food market, which is located off the A661 Wetherby Road. That means that I can't easily walk to the fishmonger anymore. So sad! It also means that we can't get their wonderful smoked kippers for weekend breakfast. What can we do now?! The answer was making Kedgeree more often. M&S's smoked haddock is pretty good and usually available. Although I may not want to wake up early in the weekend morning to cook Kedgeree, we have been enjoying the classic English breakfast for lunch/dinner. We did so this time too. I used only butter, skipped heavy cream, decorated with boiled eggs instead of poached eggs, and garnished with parsley, not cilantro. The result was delicious! We will miss kippers but Kedgeree definitely cheers us up.
