Chicken & Mushrooms with Smooth Sherry Sauce


This was my made-up chicken dish. I used boneless, skinless chicken thighs and lots of chestnut mushrooms. Onion and garlic also jointed. Flavored with sherry. Whey sherry? The reason was simple. I have a full bottle of sherry that J bought but didn't like to drink. I usually have vermouth in hand for cooking but somehow I keep forgetting to buy one. So recently I often use sherry when I would like to use vermouth. One has a completely different flavor from the other. However, so far the output was fine, especially in this chicken case. I think mushrooms love sherry or sherry love mushrooms. I know J loved the dish!
