Almond Meal Cookies with Chocolate Chips
These were almond meal cookies with chocolate chips.
No butter, no milk, no egg, no refined sugar, no flour cookies. What were in the cookies? A lot of almond and chocolate chips! I adapted a recipe of almond meal cookies with chocolate chips and coconut from minimalist baker blog. I replaced egg with vegan egg (flaxseed meal + water) and skipped shredded coconuts. I expected the cookies would spread and get flat when they were baked according to the pictures on the recipe and its instruction: "Shape dough into 1-inch balls, place on baking sheet with 1-1/2 inch space in between each." Ok, my cookies were ready to spread!
They were baked. They didn't spread. Why?
Maybe because I didn't "Press down slightly to flatten a bit"? Still there was no sign of spreading, and I don't think a little press won't make much difference.
My cookie balls were very soft and moist. I almost thought they were underbaked. They tasted ok, though. Once I became used to the unexpected texture, I started thinking they were not so bad. I like a happy ending.
