Kabocha Pound Cake

This was Kabocha Pound Cake.

I was given a whole Kabocha, or Japanese pumpkin and wondered what I can do. Kabocha is just a pumpkin and tastes like a pumpkin. But I could say richer, sweeter, creamier than common pumpkins/squashes in the US. So, to enjoy those features, I made a simple buttery pound cake with the Kobacha.
Because this was not a pumpkin bread but Kabocha cake, so pumpkin spice was not called for. Just a hint of cinnamon, vanilla and lemon juice. The cake tasted just like sweet Kabocha. I loved it!
