Two-Tone Banana Bread

This was two-tone banana bread.

Three ripen bananas were sitting on the kitchen counter. I didn't have any bread that I could pack in J's breakfast/lunch bag tomorrow morning. This was the consequence.
I used coconut oil instead of butter. I added a little bit of brown sugar, so the bread was refined sugar-free and only slightly sweet. Unsweetened cocoa power layer added not only a chocolaty flavor but also healthy minerals! Good for breakfast!
