Pure Honey Gingerbread by L'Abeille Diligente

The number "57%" struck me. That high percentage of this French gingerbread is honey. I have never seen gingerbread that is almost honey. Honey is a kind liquid. Cake is solid, well, usually. How can the honey cake be hold its shape? Such a silly question popping up in mind. Next thing I did was inviting the mystery bread to our house. Click "buy" on the online grocery website.   
The French honey gingerbread was interesting. It had a sort of bitter taste, which probably came from honey or rye flour or both, but the bitterness was somehow addictive. The texture of the bread was bouncy first and became gooey and then melting in mouth, like honey. I liked the new gingerbread. J seemed to like it, too. L'Abeille Diligente is "a fifth generation family business based in Burgundy, France specializing in honey and other products from the hive." It would be fun to try their other honey treats sometime.
