Almond Oatmeal Chocolate Chip Cookies

They were made with almond meal, oatmeal, coconut oil, coconut sugar, finely shredded coconut, peanut butter, chocolate chips, and an egg. No flour, no dairy! I adapted a recipe of Healthy Oatmeal Chocolate Chip Cookies from Minimalist Baker. The original recipe was vegan by using aquafaba, which I didn't have. I could use a "flax" egg, but I had a plenty of real eggs and there was no reason to stick to a vegan theme. My Ghirardelli 60% bittersweet chocolate chips weren't vegan chocolate anyway.
Still the cookies were pretty healthy, I think. Of course, they were pretty good, too!
