American Spoon's Wheat & Malt Pancake without an Egg

This was my third (I think) time to make pancakes with American Spoon's Wheat & Malt Pancake mix. While I was cooking a first batch on the griddle, I didn't see bubbles on the surface of the pancakes but the bottom sides looked cooked, so I flipped without thinking a lot. During the second batch, I suddenly realized I didn't add an egg to the batter! At that point, I could do nothing but cooking the third batch to use the batter up. Because an egg was missing, there were no bubbles, I guess. Without eggs, pancakes could be... I had several negative ideas. Surprisingly and luckily the result wasn't bad. They were still fluffy and tasty. Why do we need eggs in the mix?
