Spanish Tortilla with Roasted Red Peppers & Peas

I thought this traditional Spanish egg dish would be a light supper; actually it was substantial. The recipe I adapted was from Cook's Illustrated and halved all ingredients but potatoes. I added more potatoes than what the halved recipe called for. Generous potatoes in my tortilla made us very satisfied.
The tortilla in the pan somehow made J laugh. I thought our golden puffy round egg dinner looked cute.
