Roasted British Spatchcock Chicken

England might convert me to a chicken lover. Actually I didn't mind chicken in Japan, but chicken in the US didn't smell or taste good. On the contrary British chicken that I had so far, including this spatchcock (or butterflied) chicken, somehow tasted clean and fine. What is a secret of birds here?
The spatchcock chicken that I bought at M&S was ready to roast, seasoned with simply salt and pepper. Remove the plastic cover and place the container with chicken in the oven. Cook about 1 hour. Done! I didn't need to touch raw chicken in the entire process. Served with simple steamed broccoli and mashed potato, the roasted chicken became a quick weekday feast! It tasted great. How could I dislike this bird?
