Whole Wheat Walnut Buns
These were Whole Wheat Walnut Buns.
The flower shaped golden buns were similar to my Raisin Citron Walnut Milk Buns although no rye flour but more whole wheat. Toasted walnuts were generously loaded in the lovely moist crumb, so they could be found in each bite. The buns were great on the next day too. Just lightly toast them in a toaster oven, they were delicious with or without buttery spread. Some became J's lunch of course!
Whole Wheat Walnut Buns
MAKES 8
125 g bread flour
125 g whole wheat flour
20 g sugar
20 g honey
3 g salt
190 g milk (+ 1 tbs for brushing)
30 g butter
5 g dry yeast
125 g walnut, roasted, coarsely chopped
1. Place all flours, sugar, honey, salt, butter, milk, yeast in bread machine according to the machine's instruction, run dough cycle, add walnuts at 5 min before kneading cycle completes
2. Place dough on lightly floured board, divide and quickly shaping into 8 balls, cover with wet kitchen papers, rest 15 min.
3. Punch each ball and re-shape into smooth 8 balls, make 4 or 5 cuts on the edge with a knife, cover with lightly oiled plastic wrap, rest 50-60 min.
4. Brush with milk, bake 410 F, 13 min
