Almond Coconut Cookies topped with Semi-Sweet Chocolate

These were Almond Coconut Cookies topped with Semi-Sweet Chocolate.

I have been checking recipes with palm sugar after the Easter incident. A recipe on a lovely website, Living Healthy with Chocolate, caught my eye - cookies made with almond flour, coconut oil, and yes palm sugar! Since I could see a coconut theme here, I added toasted coconut flakes in.     
They were soft cookies, tasted lovely. The recipe tops cookies with chocolate avocado fudge frosting. I made chocolate avocado muffins before. They were interesting, I mean different but at last we enjoyed the muffins. So, I thought the frosting would be interesting, but didn't have avocado; instead had some leftover semi-sweet chocolate. While I liked the cookies directly out of the oven, J might enjoy a little chocolate circle on top.  
Semi-sweet chocolate (54%) is usually too sweet for me. But surprisingly the sweetness didn't bother me when I ate the chocolate with this cookie. Talking about palm sugar, only three table spoons were used for the entire cookies, which added subtle sweetness, which I liked very much. I also like palm sugar's caramel or butterscotch-like flavor. I am now a big fan of palm sugar!
