Pasta alla Norma

This was Pasta alla Norma.

Eggplant is one of my favorite vegetables. Pasta is one of my favorite carb. Both getting together is my dream. Eggplant Parmesan is a successful example, which I cook once a while. Anything else? Here was a candidate: Pasta alla Norma. I saw a recipe from Cooks Illustrated in 2009, and kept it in mind but somehow hadn't had a chance to try until now. In short, it was lovely. I followed the recipe with minor changes such as adding a handful of fresh cherry tomatoes and fresh parsley in the sauce, and using Parmigiano Reggiano for ricotta salata, which I forgot to buy. Spicy tomato sauce with garlic and anchovy - J enjoyed it too. I thought he would. But maybe with a different kind of pasta next time. Rigatoni was one of the pasta the recipe recommended, and ours was De Cecco's, my favorite pasta brand. However, it was a little too big and chewy in this case. Ziti would be nice. Campanelle would be fun. Can't wait for the next time!
